1 Tbs finely chopped parsley
8 slices low carb bread
1/2 pound thinly sliced baked ham or any deli ham
4 oz fontina cheese, cut into 4 slices (I'm sure other cheese would work)
1 bunch (about 8 spears) medium thing asparagus, trimmed and steamed 4-5 min till tender
1. Combine mayonnaise and parsley in cup; spread on one side of bread and place 4 slices, spread side down on waxed paper.
2. Arrange ham on plan side of the 4 slices, top with asparagus and cheese, and cover with remaining bread, spread side up.
3. Heat a large nonstick skillet over medium heat. Pan-grill sandwiches 1 1/2 - 2 minutes per side until golden and cheese has melted. If cheese is not completely melted, remove skilled from heat and let sandwiches stand 1 minute more. Serve.
Tip: If asparagus is not in season, roasted red peppers (preferably homemade), cut in half, would make a tasty and colorful substitute.
