Broccoli Rabe and Sausage over Penne

Italian-style pork sausage is used in this dish for its full flavor, which is nicely balanced by the slightly bitter taste of broccoli rabe.

Cook time: 25 minutes

4 servings


1 pound Italian-style pork sausage, sweet or spicy

3 large garlic cloves, pushed through a press

¼ teaspoon crushed red pepper

1¼ cups reduced-sodium chicken broth

1 bunch (about 14 ounces) broccoli rabe, tough stems removed

½ pound low carb soy penne pasta, cooked according to package directions and

drained

Fresh grated ricotta salata cheese, optional


Place sausage in a 12-inch nonstick skillet with 2 tablespoons water and cook 12 to 14 minutes over medium heat until browned on both sides, but not cooked through; center should be slightly pink when cut. Cool slightly and slice.

Add garlic and pepper to skillet and cook just until aromatic, about 20 seconds. Add broth, broccoli rabe, and sausage. Bring to a boil, reduce heat, cover, and simmer 8 minutes until sausage is no longer pink and greens are tender. Serve over pasta. Sprinkle with cheese, if desired.
